Plated restaurant dishes ready for service

Supporting pack

Menu mix and prep-list alignment

We read which dishes actually leave the pass and rewrite the prep list so garnish, protein, and pastry match the coming week's covers rather than last winter's habit.

Who it is for

Kitchens that change specials often and find the walk-in full of unused garnish by Thursday.

What you receive

A marked-up prep list and a short note on which specials to retire for the next four weeks.

Scope

Current menu plus the last 13 weeks of item sales. Tasting-menu houses are welcome if the till still records course-level lines.

Included

  • Item-level mix against covers, not against revenue alone
  • Waste notes where the kitchen already records them
  • A revised prep list in the house's own format

Not included

  • Recipe costing software, allergen labelling, or supplier swaps

How the work runs

Written by the same briefing team in Cross.

  1. Extract review
  2. Kitchen call
  3. Marked-up list returned

Time: Five working days.

Place: Remote, with an optional hour in the kitchen if you already booked a demand briefing.

Please prepare: Till item report and a photo of the current prep board.

Limits: We need item names that match the pass, not till codes the floor never uses.

Fees: From £980, or included at a reduced rate inside a kitchen demand briefing.

Request a briefing week and mention that prep-list alignment should sit inside it.
