Fees follow the house, the diary, and the walkthrough.
These figures are starting points for commissioned food and beverage demand forecasting dashboards. A second site, a marquee diary, or a cellar that has never kept a par card will move the quote. Nothing here is a checkout.

What moves a quote
- A second site that shares a kitchen, or two kitchens that do not share anything.
- Till extracts that need column mapping from an unusual export.
- Travel beyond a day's return from Cross for an on-site walkthrough.
- A function diary dense enough that banquet load cannot sit inside the kitchen briefing.
Deposits are 40 percent to hold a briefing week once extracts are promised. The balance is due when the wall calendar is delivered, before the walkthrough if you prefer that sequence. See refunds for what happens if a menu reprint lands mid-pack or a site cannot supply weeks of trade.
