For sites that overlay weddings, civic dinners, and outdoor service onto a regular restaurant, we separate the diary so the à la carte pass is not starved on the same afternoon.

Who it is for

Country houses, hotels, and pubs with a marquee or function room that trades beside the dining room.

What you receive

A load sheet for each booked event and a residual forecast for walk-in covers.

Scope

Events already in the diary for the next eight weeks, plus a residual à la carte forecast.

Included

  • Separation of guaranteed numbers from historical drop-off
  • Kitchen timing notes where the same brigade covers both rooms
  • Beverage add-on estimates where the bar is shared

Not included

  • Event sales, floor plans, or hire of linen and glassware

How the work runs

Cross office, usually alongside a kitchen demand briefing.

  1. Diary export
  2. Menu pack for each event
  3. Load sheet returned before the next large Saturday

Time: Seven working days if the restaurant briefing is already under way; otherwise ten.

Place: Documents first; a site walk of the marquee and pass where useful.

Please prepare: Function diary with guaranteed numbers and the à la carte extract for the same dates last year.

Limits: We do not invent bookings. Empty Saturdays stay empty in the forecast.

Fees: From £1,400 as a stand-alone pack; lower when added to a briefing.
